Şekerpare (Semolina Cookie)

For Syrup
Ingredients
800g water
700g sugar
2/3 drop lemon juice
Method
Bring water and sugar to a boil. Once boiling, add lemon juice and continue to boil for an additional 5 to 10 minutes before turning off the heat.
Note: Ensure the syrup is not too thick, as this will prevent the cookie from absorbing it properly.
For Dough
Ingredients
500g flour
250g butter
50g semolina
150g icing sugar
2 pieces egg
8g baking powder
whole hazelnut (for on top)
Method
Place all ingredients, except for the hazelnuts and egg, into the machine bowl and mix thoroughly using the paddle attachment.
Finally, add the egg and mix again until the dough is well combined.
Form the dough into balls weighing 20-25g each, then place them on a tray and press down slightly.
Dip the hazelnuts in a bowl of water, then place them on top of the dough pieces.
Bake at 120 degrees for 5 minutes, then increase to 170 degrees and bake for an additional 12-15 minutes, until golden brown.
Remove the tray and let it sit for 2-3 minutes, then drizzle warm sugar syrup on top. Cover with another tray, wait a few minutes, then remove any excess syrup.
