Gluten-free Chocolate Cake



For Gluten-free Chocolate Cake

Ingredients

  • 1000g dark chocolate

  • 500g butter

  • 800g sugar

  • 1000g egg white

  • 200g sugar

  • 520g egg yolk

  • 500g almond powder

  • 500g hazelnut powder

Method

  1. Melt the dark chocolate using the bain-marie method.

  2. Place the butter and 500g of sugar in a mixing bowl and whisk with the paddle attachment.

  3. In another mixing bowl, whisk the egg whites with 200g of sugar until they reach a fluffy consistency.

  4. Add the egg yolks to the butter mixture, then incorporate the hazelnut and almond powder.

  5. Finally, add the melted chocolate to the mixture, taking care not to overmix.

  6. Gently fold the butter mixture and the egg whites together.

  7. Line a tray with a Silpat and use a 1kg ring to pour 1100g of the mixture into each.

  8. Bake in a 170-degree oven for 45 to 50 minutes.

  9. After baking, let it rest for 5 minutes, then place a Silpat and another tray on top of the cake and press it. After pressing, invert the cake. Once cooled, remove the ring.
